200g Asparagus
200g Cherry Tomatoes

PREPARATION
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Press the tofu between paper towels or a clean kitchen towel to remove excess moisture. Cut the tofu into 1/2-inch cubes.
In a mixing bowl, gently toss the tofu cubes with half of the olive oil, salt, black pepper, and garlic powder.
Spread the tofu evenly on the prepared baking sheet.
Trim the woody ends off the asparagus and cut into bite-sized pieces. In a separate bowl, toss asparagus and whole cherry tomatoes with the remaining olive oil, a pinch of salt, and pepper.
