PREPARATION
Preheat your oven to 425°F (220°C).
In a mixing bowl, toss the mixed vegetables with olive oil and a pinch of rosemary, thyme, garlic powder, salt, and black pepper.
Spread the vegetables on a baking sheet lined with parchment paper and roast in the oven for 20-25 minutes until tender and slightly caramelized.
