150g Sweet Potato
2 Large Eggs

PREPARATION
Preheat your oven to 400°F (200°C).
Peel and dice the sweet potato into small cubes. Dice the red bell pepper and chop the red onion.
In an oven-safe skillet, warm the olive oil over medium heat. Add the sweet potato cubes and cook for about 5 minutes until they start to soften.
Add the turkey sausage (sliced or crumbled), red bell pepper, and red onion to the skillet. Sauté for another 5-7 minutes until the sweet potato is tender and the sausage is lightly browned.
