INGREDIENTS
6 oz Chicken Breast
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Garlic
1/4 cup Low-Fat Greek Yogurt
1 tbsp Grated Parmesan Cheese
1 tsp Mixed Dried Herbs (Basil & Oregano)
Salt and Black Pepper to taste
PREPARATION
Preheat the oven to 425°F.
Pat the chicken breast dry and season both sides with salt, pepper, and mixed dried herbs.
Heat a skillet over medium-high heat and add the olive oil. Sear the chicken breast for about 2-3 minutes per side until golden brown.
Transfer the seared chicken to a baking dish and place in the preheated oven. Bake for 12-15 minutes or until the internal temperature reaches 165°F.
While the chicken is baking, trim the ends of the green beans. Toss them with a pinch of salt, pepper, and a few drops of olive oil if desired, then spread them out on a baking sheet.
Roast the green beans in the oven for about 10-12 minutes until they are tender and slightly charred.
Meanwhile, in a small bowl, mix together the Greek yogurt, grated Parmesan, minced garlic, and a pinch of salt and pepper to form a creamy garlic herb sauce.
Once the chicken is cooked, let it rest for a couple of minutes. Serve the chicken breast topped with a drizzle of the creamy sauce alongside the roasted green beans.
