Enjoy a delightful twist on stuffed bell peppers featuring lean ground turkey mixed with fresh vegetables and a hint of herbs. This dish offers a satisfying balance of protein and veggies, lightly roasted to perfection.
INGREDIENTS
5 oz Lean Ground Turkey (142g)
1 medium Green Bell Pepper (150g)
1/4 cup Onion, chopped (40g)
1 Garlic clove
1 tsp Olive Oil (5g)
1/2 cup Spinach, chopped (15g)
1/4 cup Diced Tomatoes (40g)
1 oz Feta Cheese (28g)
PREPARATION
Preheat your oven to 375°F.
Cut the top off the bell pepper and remove the seeds and membranes. Set aside the pepper shell.
In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until fragrant and translucent, about 2-3 minutes.
Add the lean ground turkey to the skillet. Cook until the turkey is browned and fully cooked, breaking it up as it cooks.
Stir in the chopped spinach and diced tomatoes. Allow the mixture to simmer for 2 minutes until the spinach wilts. Season with a pinch of salt and pepper.
Spoon the turkey and vegetable mixture into the hollowed bell pepper. Top with crumbled feta cheese.
Place the stuffed bell pepper in a small baking dish and bake in the preheated oven for 15-20 minutes, until the pepper is tender and the feta cheese is slightly warmed.
Remove from the oven, let cool for a few minutes, and serve warm.
