INGREDIENTS
6 oz Atlantic Salmon Fillet (170g)
1 cup Asparagus (134g)
1 cup Cauliflower florets (107g)
2 tsp Extra Virgin Olive Oil
2 tbsp Plain Non-Fat Greek Yogurt
1/4 Lemon
Pinch Salt
Pinch Black Pepper
Pinch Garlic Powder
PREPARATION
Pat dry the salmon fillet and season both sides with salt, pepper, and a pinch of garlic powder.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down (if applicable) and sear for about 3-4 minutes until a golden crust forms. Flip and cook for an additional 3-4 minutes until cooked through.
While the salmon sears, trim the woody ends of the asparagus and steam them for about 4-5 minutes until tender but still crisp.
Steam the cauliflower florets until very soft, about 8-10 minutes. Transfer to a bowl and mash with a fork or immersion blender.
Mix in the olive oil and Greek yogurt with the mashed cauliflower. Season with a pinch of salt and pepper, and a squeeze of lemon juice from the quartered lemon.
Plate the seared salmon alongside the steamed asparagus and cauliflower mash. Optionally, drizzle a bit more lemon juice over the salmon for extra brightness.
