INGREDIENTS
2 cups Fresh Spinach (60g)
4 ounces Feta Cheese (113g)
2 Large Eggs
1 Phyllo Dough Sheet (20g)
1/4 cup diced Yellow Onion (40g)
1 clove Garlic (3g)
1 tsp Olive Oil (5g)
Salt & Pepper to taste
Pinch Red Pepper Flakes (optional)
PREPARATION
Preheat your oven to 375°F (190°C) and lightly grease a small baking dish with olive oil.
In a medium bowl, whisk together the eggs with a pinch of salt and pepper.
Roughly chop the fresh spinach and add it to the eggs along with the diced onion and minced garlic.
Crumble the feta cheese into the mixture and gently fold all ingredients until combined.
Place the phyllo dough sheet in the greased baking dish and lightly brush it with a small drizzle of olive oil to help it crisp up.
Pour the spinach, feta, and egg mixture onto the phyllo, spreading it out evenly.
Sprinkle a pinch of red pepper flakes over the top if using, then season with a little more salt and pepper if desired.
Bake in the preheated oven for 20-25 minutes until the phyllo is crisp and the egg mixture is set.
Remove from the oven and allow to cool for a few minutes before slicing and serving.
