PREPARATION
Press the tofu for at least 20 minutes to remove excess moisture. Once pressed, slice the tofu into thick steaks.
In a small bowl, combine olive oil, chopped fresh rosemary, thyme, salt, and black pepper. Brush the tofu steaks with the herb mixture and let them marinate for 10 minutes.
Preheat your oven to 400°F (200°C). Chop the zucchini, red bell pepper, and red onion into bite-sized pieces. Toss the vegetables with a drizzle of olive oil, salt, and pepper.
