1 cup raw Spinach
0.5 medium Onion
0.5 tsp Olive Oil
2 cloves Garlic
Handful of Fresh Herbs (Parsley and Thyme)
PREPARATION
In a medium pot, heat the olive oil over medium heat. Add the sliced onion and minced garlic, and sauté until fragrant and softened.
Add diced carrot, zucchini, and red bell pepper to the pot. Stir well and cook for about 5 minutes until the vegetables start to soften.
