PREPARATION
Preheat your oven to 400°F (200°C).
Pat the chicken thigh dry and season lightly with salt and pepper. Place it on a baking tray.
Drizzle half of the olive oil over the chicken and tuck a sprig of fresh rosemary on top.
Slice the peach in half and remove the pit. Arrange the peach halves around the chicken on the baking tray.
