INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 clove Garlic
1 tsp Olive Oil (for beans)
0.5 tbsp Olive Oil (for mash)
Salt, a pinch
Black Pepper, a pinch
PREPARATION
Pat the salmon fillet dry and season lightly with salt and black pepper.
Preheat a non-stick skillet over medium-high heat. Add 1 teaspoon of olive oil.
Once the oil is shimmering, place the salmon skin-side down (if applicable) and sear for about 3-4 minutes per side, until the exterior is nicely browned and the salmon is nearly cooked through.
While the salmon is cooking, steam the green beans until tender-crisp, about 4-5 minutes. In a separate small pan, lightly sauté the minced garlic in a tiny bit of water or olive oil to soften its bite.
Toss the steamed green beans with the sautéed garlic, adding a pinch of salt and pepper to taste.
For the cauliflower mash, steam or boil the cauliflower florets until tender, about 8-10 minutes. Transfer the cooked cauliflower to a food processor and blend until smooth. Stir in 0.5 tablespoon of olive oil and season with salt and pepper.
Plate the seared salmon alongside a portion of garlic green beans and a generous scoop of cauliflower mash. Serve warm and enjoy!
