1 tsp Olive Oil
1 cup Fresh Spinach
1 large Egg
1 large Egg White
PREPARATION
Heat a nonstick skillet over medium heat and add the olive oil.
Peel and dice the sweet potato into small cubes. Add them to the skillet and cook for about 5-7 minutes until they start to soften.
Add the chopped red bell pepper and diced onion. Sauté until the vegetables are tender and the onions become translucent.
