INGREDIENTS
2 boneless, skinless chicken thighs (200g total)
150g carrots
125g green beans
1 tsp olive oil
1 tbsp maple syrup
1 clove garlic
Salt and pepper to taste
PREPARATION
Preheat your oven to 425°F (218°C).
In a small bowl, combine the maple syrup, minced garlic, a pinch of salt and pepper, and set aside.
Place the chicken thighs on a baking sheet lined with parchment paper. Brush them lightly with olive oil and season with salt and pepper.
Arrange the carrots around the chicken and drizzle half of the maple glaze over the carrots.
Roast in the preheated oven for 20 minutes.
After 20 minutes, add the green beans to the baking sheet and drizzle the remaining maple glaze over the chicken and vegetables.
Continue roasting for an additional 10-15 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender with crispy edges.
Remove from oven, allow to rest for a few minutes, then serve your roasted chicken thighs with maple glazed carrots and crispy green beans.
