6 oz Salmon Fillet
1 cup Green Beans
1/2 cup Cooked Brown Rice
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Once the oil is shimmering, add the salmon fillet skin-side down. Sear for about 4-5 minutes, then flip and cook for another 3-4 minutes until the salmon is just cooked through and has a golden crust.
While the salmon cooks, bring a small pan of water to a simmer and blanch the green beans for about 3 minutes until crisp-tender. Drain and set aside.
In the same pan used for green beans, add minced garlic and sauté briefly for about 30 seconds until fragrant, then toss the blanched green beans in to coat with the garlic and a little of the olive oil from the pan.
Heat the pre-cooked brown rice gently in a microwave or in a small saucepan until warmed through.
Plate the seared salmon with a serving of garlic green beans and brown rice on the side. Garnish with an extra drizzle of olive oil if desired and serve immediately.
