PREPARATION
Preheat your oven to 400°F (200°C).
Wash the sweet potato thoroughly and pat dry. Pierce several times with a fork and place on a baking sheet.
Roast the sweet potato in the oven for 40-45 minutes, or until tender when pierced with a fork.
While the sweet potato is roasting, crisp the bacon in a skillet over medium heat until it reaches your desired level of crispness. Once done, set aside on paper towels to drain and chop into small pieces.
