INGREDIENTS
6 oz Salmon Fillet (approx. 170g)
1 cup Cauliflower (approx. 107g)
1 tsp Olive Oil (approx. 5g)
1 cup Asparagus (approx. 134g)
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for about 3-4 minutes until a golden crust forms. Flip and cook an additional 3-4 minutes, or until desired doneness.
Meanwhile, steam the asparagus in a steamer basket over simmering water for about 4-5 minutes until tender but still crisp.
For the cauliflower mash, boil or steam the cauliflower florets until very tender, about 8-10 minutes. Drain and transfer to a bowl.
Add the garlic clove (minced) and 1 tsp olive oil to the cauliflower. Mash until smooth with a few small lumps for texture. Season with salt and pepper.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Serve immediately.
