INGREDIENTS
7 ounces Salmon Fillet
1 cup Green Beans
1.5 cups Cauliflower Florets
2 teaspoons Olive Oil
2 cloves Garlic
1/3 cup Nonfat Greek Yogurt
Salt & Pepper to taste
1 tablespoon Lemon Juice
PREPARATION
Pat the salmon dry and season with salt and pepper.
Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Add the salmon, skin-side down if applicable, and sear for about 4-5 minutes per side until cooked to your desired doneness. Squeeze a bit of lemon juice over the salmon during the last minute.
While the salmon cooks, steam the green beans until just tender, about 4-5 minutes. In a separate pot, steam the cauliflower florets until soft, approximately 8-10 minutes.
In a small pan, lightly sauté minced garlic in the remaining teaspoon of olive oil until fragrant, then toss with the steamed green beans.
Drain the steamed cauliflower and mash it using a fork or blender until smooth; stir in salt and pepper to taste.
Plate the cauliflower mash as a base, top with the seared salmon, and arrange the garlic green beans on the side. Garnish the salmon with a dollop of nonfat Greek yogurt and a drizzle of lemon juice.
Serve warm and enjoy your balanced, flavorful dinner.
