Seared Salmon with Roasted Broccoli and Garlic Mashed Cauliflower
Enjoy a perfectly seared salmon paired with roasted broccoli and a creamy garlic mashed cauliflower. This dish combines the rich flavors of tender fish, lightly charred vegetables, and a smooth, tangy mash that is both satisfying and nutritionally balanced.
INGREDIENTS
4.5 oz Salmon Fillet
1 cup Broccoli
1 cup Cauliflower
1 tsp Olive Oil
1/4 cup Plain Greek Yogurt
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F for roasting the broccoli.
Season the salmon fillet with salt and pepper. Allow it to rest at room temperature while you prepare the sides.
Toss the broccoli with a bit of olive oil, salt, and pepper, then spread it evenly on a baking sheet. Roast in the oven for 15-18 minutes until tender with slight charring.
Steam or boil the cauliflower until it is very tender, about 10 minutes.
In a small saucepan, lightly sauté the minced garlic in a teaspoon of olive oil (if extra flavor is desired) for about 1 minute until fragrant.
Transfer the cooked cauliflower to a bowl, add the sautéed garlic, and mix in the Greek yogurt. Mash until smooth; season with salt and pepper to taste.
Heat a non-stick skillet over medium-high heat. Sear the salmon for about 3-4 minutes per side, or until the flesh flakes easily with a fork.
Plate the seared salmon alongside a serving of roasted broccoli and a generous scoop of garlic mashed cauliflower. Serve warm and enjoy!
