INGREDIENTS
300g Extra Firm Tofu
200g Asparagus
1 tbsp Olive Oil
3 tbsp Lemon Juice
2 cloves Garlic
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat the oven to 425°F (220°C). Rinse the asparagus and trim the woody ends.
Slice the extra firm tofu into 1/2-inch thick pieces. Pat dry with paper towels to remove excess moisture.
In a small bowl, combine the lemon juice, minced garlic, a pinch of salt, and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat. Once hot, add the tofu slices and sear each side for 3-4 minutes until golden brown.
Place the asparagus on a baking sheet, drizzle with the remaining olive oil, and season with a pinch of salt and pepper. Roast in the preheated oven for 10-12 minutes until tender and slightly crispy on the edges.
Once the tofu is seared, drizzle the lemon-garlic mixture over the tofu in the skillet, letting it cook for an additional minute to absorb the flavors.
Plate the seared tofu alongside the roasted asparagus and serve warm.
