INGREDIENTS
4 egg whites (approx. 120g)
1.5 links Turkey Sausage (approx. 75g)
1 cup fresh Spinach
1 medium Sweet Potato (approx. 130g)
1.5 Tbsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Peel and dice the sweet potato into cubes. Toss the cubes with 0.5 tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for about 20-25 minutes or until tender and lightly caramelized.
While the sweet potato roasts, heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
Add the turkey sausage (cut into pieces if needed) to the skillet and sauté for 2-3 minutes until slightly browned.
Pour in the egg whites and add the fresh spinach. Season with a pinch of salt and pepper, stirring gently to combine.
Cook the scramble for about 3-4 minutes until the egg whites are just set and the spinach has wilted.
Plate the scramble alongside the roasted sweet potato cubes and serve warm.
