Crispy Sweet Potato and Egg Hash
A hearty and bright hash featuring crispy sweet potato cubes, savory turkey sausage, and a mix of fresh vegetables all tossed together with perfectly cooked eggs. A satisfying mix of textures and colors, this dish is ideal any time of day and fits neatly within targeted macro goals.
INGREDIENTS
1 medium Sweet Potato (~114g)
2 large Eggs
1 large Egg White
3 ounces Turkey Sausage (~85g)
1/2 medium Red Bell Pepper (~75g)
1/4 medium Onion (~25g)
1 cup Spinach (~30g)
1 teaspoon Olive Oil
Salt & Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes. Rinse and cut the red bell pepper into strips, and finely dice the onion.
In a non-stick skillet over medium heat, add the olive oil. Once heated, add the diced sweet potato and season lightly with salt and pepper. Cook for about 8-10 minutes until tender and crispy on the edges, stirring occasionally.
Add the diced onion and red bell pepper to the skillet, and sauté for another 3-4 minutes until softened.
Mix in the turkey sausage, breaking it apart with a spatula, and allow it to heat through for around 2-3 minutes.
Reduce the heat to medium-low then create small wells in the hash to crack the eggs. Crack two whole eggs and add one egg white into separate spaces. Cover the skillet and let cook until the eggs reach your preferred doneness, about 4-5 minutes.
Fold in the fresh spinach during the last minute of cooking so it wilts without losing color and texture.
Remove from heat once the eggs are set and the hash is crisp and flavorful. Serve immediately, enjoying a balanced blend of protein, carbs, and healthy fats.
