INGREDIENTS
5.5 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 oz Nonfat Greek Yogurt
1 tbsp Olive Oil
1 tsp Butter
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season lightly with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat. Once hot, add the salmon fillet, skin side down if applicable, and sear for about 3-4 minutes on each side until nicely browned and cooked through.
While the salmon cooks, steam the asparagus in a steamer or over a pot of boiling water for about 4-5 minutes until crisp-tender. Season with a pinch of salt.
For the garlic cauliflower mash, steam the cauliflower florets until soft (about 8-10 minutes). In a bowl, combine the steamed cauliflower with 1 clove of minced garlic, nonfat Greek yogurt, and 1 tsp butter. Blend or mash until smooth and creamy. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of garlic cauliflower mash. Garnish with additional pepper if desired and serve warm.
