For the broccoli, toss with a little olive oil, salt, and pepper. Roast in an oven preheated to 425°F for about 15-20 minutes or until edges are slightly crispy.
Plate the meal by adding a serving of quinoa, arranging the sliced grilled chicken breast on top, and adding the roasted broccoli on the side.
Finish with a light drizzle of lemon juice over the broccoli and chicken before serving.
