INGREDIENTS
350 grams Firm Tofu
1/2 cup Shelled Edamame (approx. 75g)
1 cup Broccoli
1 medium Red Bell Pepper
1 medium Carrot
1 clove Garlic
1 tablespoon Low-Sodium Soy Sauce
1 teaspoon Sesame Oil
1 teaspoon Sesame Seeds
PREPARATION
Press the tofu for at least 15 minutes to remove excess water, then cut it into bite-sized cubes.
In a non-stick skillet, heat the sesame oil over medium heat and add the tofu cubes. Cook until all sides are golden and crispy, about 6-8 minutes. Remove tofu and set aside.
In the same skillet, add minced garlic and stir for about 30 seconds until fragrant.
Add chopped broccoli, sliced red bell pepper, and julienned carrot. Stir-fry the vegetables for 4-5 minutes until tender-crisp.
Mix in the shelled edamame, then return the crispy tofu to the skillet.
Pour the low-sodium soy sauce over the mixture and toss to combine evenly. Cook for an additional 1-2 minutes so that flavors meld.
Sprinkle over the sesame seeds before serving. Enjoy this nutrient-packed stir-fry hot.
