6 oz Salmon Fillet
1 cup Fresh Asparagus
1 tbsp Olive Oil
1/2 Lemon
1 tbsp Fresh Rosemary, chopped
1 tbsp Fresh Thyme, chopped
Salt and Black Pepper to taste
PREPARATION
Preheat the oven to 425°F.
Rinse the asparagus and trim the woody ends. Toss with half of the olive oil, a pinch of salt, and pepper, then spread on a baking sheet.
Roast the asparagus in the oven for 12-15 minutes until tender and slightly crisp.
While the asparagus roasts, pat the salmon fillet dry. In a small bowl, combine the remaining olive oil, juice from the half lemon, chopped rosemary and thyme, salt, and pepper.
