INGREDIENTS
6 oz Salmon Fillet
6 Asparagus Spears
1 cup chopped Cauliflower
1/3 cup Nonfat Greek Yogurt
1 tsp Olive Oil for Mash
1/2 tsp Olive Oil for Searing
Salt and Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add the 1/2 teaspoon of olive oil. Once hot, sear the salmon for about 3-4 minutes per side until a golden crust forms and the inside reaches desired doneness.
While the salmon cooks, bring a small pot of water to a simmer and add a pinch of salt. Add the asparagus spears and steam for 4-5 minutes until they are tender yet crisp.
For the cauliflower mash, steam the chopped cauliflower in a steamer or in a covered pot with a little water for about 8-10 minutes until very tender.
Transfer the steamed cauliflower to a blender or use an immersion blender. Add the nonfat Greek yogurt and 1 teaspoon of olive oil, then blend until smooth. Season with salt and pepper to taste.
Plate the seared salmon with a side of steamed asparagus and a generous serving of cauliflower mash. Serve warm and enjoy your nutritious dinner.
