INGREDIENTS
250g Extra-Firm Tofu
75g Shelled Edamame
1/4 cup Chickpeas
100g Broccoli
50g Red Bell Pepper
1 tbsp Sesame Seeds
1 tbsp Soy Sauce
1 tsp Fresh Ginger
1 clove Garlic
1 tsp Olive Oil
PREPARATION
Press the tofu for 15-20 minutes to remove excess moisture, then cut it into bite-sized cubes.
In a bowl, lightly toss the tofu cubes with a drizzle of olive oil and a pinch of salt to help with crispiness.
Heat a non-stick skillet over medium-high heat and sauté the tofu cubes until all sides turn golden and crispy. Remove and set aside.
In the same skillet, add a little more olive oil if needed, and stir-fry minced garlic and grated ginger until fragrant.
Add the broccoli and red bell pepper, stir-frying for 2-3 minutes until they start to soften but remain crisp.
Toss in the shelled edamame and chickpeas, and drizzle with soy sauce. Cook for another 1-2 minutes to warm through.
Return the crispy tofu to the skillet and gently mix to combine all ingredients.
Sprinkle toasted sesame seeds over the top, stir to distribute evenly, and serve immediately.
