INGREDIENTS
200g Salmon Fillet
1 tsp Extra Virgin Olive Oil (for searing)
1 cup Cauliflower, chopped
1 Garlic Clove
1 tbsp Extra Virgin Olive Oil (for mash)
1 tsp Unsalted Butter
100g Asparagus
Salt & Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium-high heat and add 1 teaspoon of olive oil.
Season the 200g salmon fillet with salt and pepper on both sides.
Place the salmon in the hot skillet, skin-side down if applicable, and sear for about 3-4 minutes per side until a golden crust forms and the salmon is just cooked through.
While the salmon is cooking, steam the asparagus until tender, about 4-5 minutes. Set aside and season lightly with salt and pepper.
In a small pot, steam the chopped cauliflower for about 8-10 minutes until very tender.
Mince the garlic clove and add it to the steamed cauliflower. Mash together using a fork or immersion blender.
Stir in 1 tablespoon of extra virgin olive oil and 1 teaspoon of unsalted butter into the mashed cauliflower. Season with salt and pepper to taste.
