INGREDIENTS
250g Extra-Firm Tofu
1/2 cup Shelled Edamame
40g Rice Noodles
1 tbsp Peanut Butter
1 tbsp Cornstarch
1 medium Carrot
1 medium Red Bell Pepper
2 cloves Garlic
1 tsp Sriracha Sauce
1 tbsp Lime Juice
1 tsp Sesame Oil
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
Dust the tofu cubes lightly with cornstarch, ensuring even coating.
Heat a non-stick pan over medium-high heat and add half the sesame oil. Fry the tofu until all sides are crispy and golden. Remove and set aside.
Prepare the rice noodles according to package instructions; drain and set aside.
In the same pan, add the remaining sesame oil. Sauté minced garlic along with sliced carrot and red bell pepper until they begin to soften.
Stir in the cooked noodles, edamame, and crispy tofu.
In a small bowl, whisk together peanut butter, sriracha sauce, and lime juice to create a spicy peanut sauce.
Pour the sauce over the noodle mixture and toss everything gently until well combined and heated through.
Serve immediately, garnished with extra lime wedges or scallions if desired.
