INGREDIENTS
7 oz Salmon Fillet
1/2 cup Asparagus
1 cup Cauliflower
1 tsp Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
Salt & Pepper
PREPARATION
Season the salmon fillet with a pinch of salt and pepper. Squeeze lemon juice over the top and set aside.
Preheat a skillet over medium-high heat. Add the olive oil once hot.
Place the salmon fillet in the skillet, skin side down if applicable. Sear for about 3-4 minutes per side until nicely browned and cooked through.
While the salmon cooks, steam the asparagus by placing it in a steamer basket over boiling water for about 4-5 minutes until tender yet crisp.
For the cauliflower mash, steam the cauliflower florets (or microwave them with a splash of water) until very tender, about 8-10 minutes. Transfer to a bowl.
Add a crushed garlic clove into the hot cauliflower and mash with a fork or potato masher until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Enjoy immediately.
