INGREDIENTS
6 oz Salmon Fillet
1 cup cooked Brown Rice
1 cup Baby Spinach
1 tsp Olive Oil
1 clove Garlic
1 Lemon Wedge
Salt and Pepper to taste
PREPARATION
Rinse the salmon fillet and pat dry. Season with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat. Once hot, place the salmon skin-side down and sear for about 4-5 minutes until the skin becomes crispy. Flip and cook for another 3-4 minutes until desired doneness is achieved.
While the salmon is cooking, prepare the spinach. In a separate pan, heat 1 teaspoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the baby spinach to the skillet with garlic. Sauté until wilted, about 2-3 minutes. Season lightly with salt and pepper.
Warm the cooked brown rice if needed. Plate the rice as the base, top with the garlic sautéed spinach, and finally place the seared salmon on top.
Finish with a squeeze of fresh lemon juice over the salmon before serving.
