INGREDIENTS
5 oz Lean Ground Beef (90% lean)
14 g Blue Cheese
5 Asparagus Spears
1 medium Sweet Potato
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Form the lean ground beef into two equally sized patties. Make a small indentation in the center of each patty and carefully insert the blue cheese, sealing the edges to encase the cheese.
Season the patties with salt and pepper on both sides.
Place the patties on a baking sheet lined with parchment paper.
Arrange the asparagus spears on another baking sheet. Drizzle with olive oil and season with salt and pepper.
Peel and slice the sweet potato into thin rounds or wedges. Toss with a light drizzle of olive oil, salt, and pepper, then spread evenly on a baking sheet.
Place the beef patties and the vegetables in the oven. Roast the asparagus and sweet potato for about 20-25 minutes, turning halfway through, until the asparagus is tender and the sweet potato is crispy.
For the patties, bake for approximately 15-20 minutes or until cooked to your desired doneness.
Once everything is done, plate one patty with a side of roasted asparagus and crispy sweet potato. Enjoy!
