PREPARATION
Pat the barramundi fillet dry with paper towels and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the barramundi fillet skin-side down in the skillet, pressing gently to ensure even contact. Sear for about 3-4 minutes until the skin is crispy.
