Dice the sweet potato into small cubes and thinly slice the red onion. Mince the garlic.
Heat the olive oil in a non-stick skillet over medium heat. Add the sweet potato cubes and sauté for about 8 minutes until they start to soften.
Add the red onion and garlic to the skillet and continue to cook until the sweet potatoes are tender and lightly crispy on the edges, about 4-5 more minutes.
