300g Extra Firm Tofu
100g Shelled Edamame
45g Broccoli
75g Red Bell Pepper
50g Carrot
50g Sugar Snap Peas
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Fresh Ginger, minced
1 Garlic clove, minced
1 tsp Sesame Seeds
PREPARATION
Press the tofu to remove excess water and then cut it into 1-inch cubes.
In a bowl, gently toss the tofu cubes with a little low-sodium soy sauce and sesame oil.
Heat a non-stick skillet over medium heat and add the tofu. Cook until all sides are golden and slightly crispy, then remove from the skillet.
In the same skillet, add a splash more sesame oil if needed and sauté minced garlic and ginger until fragrant.
Add the broccoli, red bell pepper, carrot, and sugar snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
Return the cooked tofu to the skillet, and add the shelled edamame along with any remaining soy sauce. Toss everything together for 1-2 minutes until heated through.
