INGREDIENTS
1 medium Potato (~150g)
1 cup Low-Fat Milk (245g)
1/2 cup Nonfat Greek Yogurt (120g)
1 oz Low-Fat Cheddar Cheese (28g)
2 oz Shredded Chicken Breast (56g)
1/4 cup diced Yellow Onion (40g)
2 cloves Garlic
1 cup Low-Sodium Chicken Broth (240g)
1 tbsp Fresh Chives, chopped
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Wash and dice the potato into small cubes. Set aside.
Heat olive oil in a medium pot over medium heat. Add diced onion and minced garlic, sauté until the onion becomes translucent.
Add the potato cubes to the pot and stir in the low-sodium chicken broth. Bring to a simmer and cook until the potatoes are tender, about 12-15 minutes.
Once the potatoes are soft, add the low-fat milk and stir in the nonfat Greek yogurt gradually to create a creamy texture. Stir continuously to prevent curdling.
Mix in the shredded chicken breast and continue to heat through for 2-3 minutes. Season the soup with salt and pepper to taste.
Remove the pot from heat and ladle the soup into bowls. Top each serving with a sprinkle of low-fat cheddar cheese and fresh chives.
Serve warm and enjoy your comforting, protein-packed loaded potato soup.
