150g Brussels Sprouts
1 tbsp Extra Virgin Olive Oil
1 tbsp Balsamic Vinegar
1 tbsp Fresh Herbs (Rosemary & Thyme)
PREPARATION
Preheat the oven to 400°F (200°C).
Pat the chicken breast dry and season lightly with salt, pepper, and chopped fresh herbs.
Place the chicken on a baking tray and roast in the oven for about 20-25 minutes or until the internal temperature reaches 165°F (74°C).
While the chicken is roasting, trim and halve the Brussels sprouts. Toss them in a bowl with the olive oil and a pinch of salt and pepper.
Spread the Brussels sprouts on another baking tray and roast for 15-20 minutes until crispy on the outside.
In a small saucepan over low heat, combine balsamic vinegar and a little of the roasted Brussels sprouts' juices to create a light glaze; simmer for 3-4 minutes until slightly thickened.
Once the roasted Brussels sprouts are done, drizzle the balsamic glaze over them and gently toss.
