INGREDIENTS
5 oz T-Bone Steak
1 cup Asparagus
1 tsp Olive Oil
1 clove Garlic
1 sprig Fresh Rosemary
1 sprig Fresh Thyme
Salt & Pepper to taste
PREPARATION
Take the T-Bone steak out of the refrigerator about 20 minutes before cooking to bring it to room temperature. Pat dry and season generously with salt and pepper on both sides.
Preheat a heavy skillet (preferably cast iron) over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes on each side for medium-rare, adjusting the time based on desired doneness.
While the steak is cooking, prepare the asparagus. Rinse and trim the woody ends. In a small bowl, toss the asparagus with olive oil, minced garlic, chopped rosemary, and chopped thyme. Season lightly with salt and pepper.
Heat a separate pan over medium heat and add the seasoned asparagus. Roast them for about 4-5 minutes, stirring occasionally until tender yet still crisp with slightly charred edges.
After the steak has reached your desired doneness, remove it from the pan and let it rest for about 5 minutes before slicing against the grain.
Plate the steak alongside the herb-roasted asparagus and serve immediately.
