INGREDIENTS
5 ounces Shrimp (raw)
1 cup Whole Wheat Linguine (cooked)
1 cup Cherry Tomatoes
1 tablespoon Olive Oil
2 cloves Garlic
1/2 teaspoon Red Pepper Flakes
2 tablespoons Fresh Basil
Salt and Black Pepper to taste
PREPARATION
Bring a pot of water to a boil, season with a pinch of salt, and cook the whole wheat linguine according to package instructions until al dente. Drain and set aside.
Pat the shrimp dry and season lightly with salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and red pepper flakes, and sauté for about 30 seconds until fragrant.
Add the shrimp to the skillet. Sear for about 2 minutes per side or until the shrimp turn pink and opaque. Remove the shrimp and set aside.
In the same skillet, add the cherry tomatoes. Allow them to blister for 3-4 minutes, stirring occasionally, until they soften and begin to burst.
Return the shrimp to the skillet, and toss with the blistered tomatoes. Mix in the cooked linguine until everything is evenly combined. Adjust seasoning with salt and black pepper.
Finish by stirring in the fresh basil, and serve immediately.
