INGREDIENTS
6 ounces Shrimp, peeled & deveined (170g)
1 medium Zucchini (196g)
2 cloves Garlic
1 tablespoon Butter (14g)
Juice of 1/2 Lemon
1 teaspoon Olive Oil (5g)
Salt, Pepper & Red Pepper Flakes to taste
PREPARATION
Pat the shrimp dry with a paper towel and season lightly with salt, pepper, and red pepper flakes.
Spiralize the zucchini to create noodles and set aside.
Mince the garlic cloves.
Heat a large skillet over medium-high heat and add the olive oil.
Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and are just cooked through. Remove shrimp from the pan and set aside.
In the same skillet, lower the heat to medium and add the butter. Once melted, add minced garlic and sauté for about 30 seconds until fragrant.
Add the zucchini noodles to the skillet and toss them in the garlicky butter sauce for 1-2 minutes until just tender.
Return the shrimp to the skillet, drizzle with lemon juice, and toss everything together to combine well.
Serve immediately, garnished with an extra sprinkle of red pepper flakes if desired.
