1 cup Green Beans
1 cup Cauliflower
1 tsp Olive Oil
2 cloves Garlic

PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Preheat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down (if skin-on) and sear for about 3-4 minutes until a golden crust forms. Flip and cook for another 3-4 minutes until the salmon is cooked through. Remove from the pan and set aside.
In the same skillet, add the olive oil and toss in the minced garlic. Sauté for about 30 seconds until fragrant.
Add the green beans to the skillet and sauté with the garlic for about 4-5 minutes, stirring occasionally until they are tender-crisp. Season with a pinch of salt and pepper.
For the mashed cauliflower, steam or boil cauliflower florets until very tender (about 8-10 minutes). Drain and mash with a fork or immersion blender until smooth, adding a pinch of salt and pepper to taste.
