7 oz Salmon Fillet
1 cup Green Beans
1 garlic clove
1 cup Cauliflower
1 tbsp Olive Oil
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 4-5 minutes per side, or until cooked through and nicely browned.
While the salmon is cooking, steam the green beans until tender-crisp, about 4-5 minutes.
In a small pan, heat half of the olive oil over medium heat. Add the minced garlic clove and sauté until fragrant, then toss the steamed green beans in the garlic oil and season with a pinch of salt and pepper.
For the cauliflower mash, steam or boil the cauliflower until soft, about 8-10 minutes. Drain well and transfer to a bowl. Add the remaining olive oil, a pinch of salt and pepper, and mash until smooth with a fork or immersion blender.
