A well-rounded meal that’s as nourishing as it is delicious.
INGREDIENTS
7 oz Cod Fillet (~200g)
2 tbsp Almond Flour (~14g)
1 small Sweet Potato (~130g)
1 tsp Olive Oil (~4.5g)
1 tsp Paprika
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Wash and cut the sweet potato into fry-like strips. Toss them in a small bowl with olive oil, paprika, salt, and pepper.
Spread the sweet potato fries out on one half of the baking sheet in a single layer.
Place the cod fillet on the other half of the baking sheet. Pat dry with a paper towel.
Sprinkle salt and pepper on the fish, then gently press almond flour onto the top of the fillet to create a light, crispy coating.
Place the baking sheet in the oven. Roast the sweet potato fries for about 20-25 minutes, turning halfway through for even crispiness, and bake the fish for approximately 12-15 minutes or until the fish is opaque and flakes easily with a fork.
Remove from the oven, plate the fish alongside the crispy roasted sweet potato fries, and enjoy!
