Using kitchen shears, gently split the lobster tails down the center of the top shell to expose the meat. Lift the meat slightly and rest it on top of the shell.
In a small bowl, combine the olive oil, melted butter, minced garlic, chopped parsley, salt, and pepper to make the herb-garlic mixture.
Brush the lobster meat generously with the garlic-herb mixture, reserving a small bit for the green beans.
Place the prepared lobster tails on a baking sheet lined with parchment paper and roast in the oven for 10-12 minutes, or until the meat becomes opaque and slightly firm.
Meanwhile, toss the green beans in a small amount of the remaining herb-garlic mixture. Spread them out on a separate baking sheet.
Place the green beans in the oven during the last 10 minutes of the lobster cooking time, allowing them to crisp up and roast without overcooking.
Once both the lobster tails and green beans are done, remove from the oven, plate, and garnish with an extra sprinkle of fresh parsley if desired.
