INGREDIENTS
1 medium Sweet Potato
1 medium Red Bell Pepper
1/2 medium Yellow Onion
3 Turkey Sausage Links
3 Large Eggs
1/2 tbsp Olive Oil
Salt and Pepper to taste
PREPARATION
Peel (if desired) and dice the sweet potato into small cubes for optimal crispness.
Dice the red bell pepper and finely chop half a yellow onion.
Heat 1/2 tablespoon of olive oil in a large non-stick skillet over medium heat.
Add the diced sweet potato and cook for about 5 minutes, stirring occasionally, until it begins to soften.
Stir in the red bell pepper and chopped onion, and continue cooking until the sweet potato is tender and all vegetables have slightly caramelized, about 7-10 minutes. Season with salt and pepper.
In a separate pan, lightly fry the turkey sausage links until heated through and slightly browned on the edges. Alternatively, you can slice them and add them directly to the hash during the last few minutes of cooking.
Push the hash to one side of the skillet and crack the eggs into the empty space. Fry them to your preferred doneness (sunny side up works great to keep the yolk runny).
Once the eggs are cooked and the hash is crispy, gently mix everything together on the plate. Adjust seasoning as needed and serve immediately.
