INGREDIENTS
150 grams Tempeh
75 grams Shelled Edamame
1/2 medium Red Bell Pepper
1 cup chopped Broccoli
1 small Carrot
1 tbsp Maple Syrup
1 tbsp Low-Sodium Soy Sauce
1 clove Garlic
1 tsp Fresh Ginger
1 tsp Sesame Oil
PREPARATION
Press and cut tempeh into bite-sized cubes. In a bowl, toss tempeh lightly with a pinch of salt.
In a small bowl, whisk together maple syrup, soy sauce, minced garlic, grated ginger, and sesame oil.
Heat a non-stick skillet over medium heat. Add the tempeh and cook until all sides become golden and crispy, about 5-7 minutes.
Remove tempeh from the skillet and set aside. In the same skillet, add the chopped red bell pepper, broccoli, and sliced carrot.
Stir-fry the vegetables for about 3-4 minutes until they start to soften but still retain crunch.
Return the crispy tempeh to the skillet and pour the maple glaze over the mixture. Stir everything together ensuring the tempeh and vegetables are evenly coated.
Add in the shelled edamame and stir-fry for an additional 2 minutes, allowing the flavors to blend.
Serve warm, and enjoy this balanced and vibrant dish!
