150g Baby Potatoes
1 tsp Extra Virgin Olive Oil
2 cloves Garlic
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 425°F (220°C) for the potatoes.
Wash the baby potatoes and cut them in half. Toss them in 1/2 tsp olive oil, a pinch of salt, and a pinch of black pepper.
Spread the potatoes on a baking sheet and roast in the oven for 20-25 minutes until crispy and golden, stirring halfway through.
While the potatoes roast, pat the sirloin steak dry with paper towels. Season both sides with salt and pepper.
Mince the garlic cloves and roughly chop the rosemary and thyme. Rub the garlic and herbs evenly onto both sides of the steak with the remaining 1/2 tsp olive oil.
