INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1.5 cups Cauliflower
2 tsp Olive Oil
Pinch Salt
Pinch Black Pepper
1 tsp Garlic Powder
PREPARATION
Pat the salmon dry and season both sides with salt, black pepper, and garlic powder.
Heat a non-stick skillet over medium-high heat and add 1 tsp of olive oil.
Place the salmon skin-side down (if applicable) and sear for about 3-4 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Meanwhile, steam the asparagus in a steamer or in a covered pan with a splash of water for about 4-5 minutes until tender but still crisp.
Break the cauliflower into florets and steam for 8-10 minutes until soft.
Transfer steamed cauliflower to a bowl, add 1 tsp of olive oil, a pinch of salt and pepper, then mash until smooth, leaving a few lumps for texture.
Plate the seared salmon with the steamed asparagus on the side and a generous serving of cauliflower mash. Serve warm.
