2 units Liquid Egg Whites (approx. 66g)
3 tbsp Fresh Mixed Herbs
1 cup Fresh Spinach
1/2 cup Swiss Chard
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Crack the eggs into a bowl and add the liquid egg whites. Whisk together until fully combined; season lightly with salt and pepper.
Rinse the fresh spinach and Swiss chard. Roughly chop the greens and set aside.
Heat the olive oil in a non-stick skillet over medium heat. Add the chopped greens and sauté until wilted, about 2-3 minutes.
Add the egg mixture to the skillet with the greens. Let it sit for a few seconds to begin setting at the bottom before gently stirring.
Continuously stir the eggs over low-medium heat until they become softly scrambled and creamy.
