INGREDIENTS
4 oz Chicken Breast
1/2 cup Whole Wheat Flour
1 large Egg White
1 medium Carrot
2 stalks Celery
1 medium Onion
4 cups Low-Sodium Chicken Broth
2 tbsp Fresh Parsley
1 tbsp Fresh Dill
Salt & Pepper to taste
PREPARATION
Dice the onion, carrot, and celery into uniform pieces.
In a large pot, heat a small amount of water or broth over medium heat and add the diced vegetables. Sauté until they begin to soften, about 3-4 minutes.
Add the chicken broth to the pot and bring it to a simmer.
Meanwhile, cut the chicken breast into small bite-sized pieces. Add these to the simmering broth and cook until the chicken is fully cooked, about 7-8 minutes.
For the dumplings, in a small bowl combine the whole wheat flour, egg white, a pinch of salt and pepper, and chopped fresh herbs (parsley and dill). Mix until a sticky dough forms.
Drop small spoonfuls of the dumpling mixture into the simmering soup. Cover the pot and allow the dumplings to cook for about 10 minutes. Avoid stirring too much to help them hold together.
Taste and adjust seasonings with salt and pepper. Garnish with additional fresh herbs if desired and serve hot.
